A quiet revolution
Not long ago, few people would have travelled to Scandinavia for the food. Today, the Nordics are one of the most talked-about culinary regions in the world. The turning point came in the early 2000s, when a group of chefs in my hometown Copenhagen set out to define a new Nordic kitchen based on purity, simplicity and the landscape around them. It became known as New Nordic Cuisine, and restaurants like Noma carried it to the world.
What is Nordic cuisine?
At its heart, it is cooking guided by place and season. Chefs work with what the land and sea give them: Cold-water fish and shellfish, root vegetables, wild herbs, mushrooms, berries, game and dairy, often from small local producers. The flavours are clean and fresh, with a Nordic balance of acidity, salt, smoke and a touch of sweetness.
Old traditions, fresh eyes
Long, dark winters taught the Nordics to preserve. Pickling, smoking, curing and fermenting are old techniques that modern chefs have rediscovered and refined. Alongside them lives a much-loved everyday food culture: Dense rye bread, open-faced “smørrebrød” in Denmark, a Swedish “fika” with coffee and cinnamon buns, and Finnish berries and rye.
Why it has captured the world
Nordic food speaks to what many travellers are looking for today: Honesty, sustainability and a real sense of place. It is seasonal, local and thoughtful, and it is as much about the experience around the table as the plate itself. The Nordic idea of “hygge” in Denmark, with its warmth, candlelight, long-table dinner and good company, is part of the appeal.
How it shows up today
You will find it everywhere - from Michelin-starred tasting menus to market halls, neighbourhood bakeries and cosy bistros. Some of the most memorable meals are the simplest: Fresh fish by the water, a picnic in the countryside, or a long lunch with a view.
